This very unique knives are made by Mr. Tsuneo Yoshida is a 3rd generation blade-smith from Sanjo in Niigata, I think for Semi SS knives he is one of the best in Japan !! But i also love his carbon knive that is made of Takefu V2 steel They take super sharp edge and sharpens very easy ! I will recommend them for any Pro kitchen chefs ! As a good line knives or slicer. They will develop darker patina so contrast will look even better !! Spine and choil is nicely rounded. Very good knives for the price !!
