About JNS Japanese Natural Stones

JNS Japanese Natural Stones is a one-man operation founded and run by me Maksim Enevoldsen, who registered the business in 2011.

My journey into Japanese knives and stones began as a trained chef in Denmark, with education in Gastronomy. 

With over 10 years of experience working in various restaurants, I have used a wide range of knives and sharpening stones

Over the years, I have used many different Japanese knives and natural stones, which led me to start JNS. 

I have had the privilege of visiting and training with some of my favoured blacksmiths, including Shigefusa, Kato, Wakui, and others. Through these experiences, I have developed my own style of sharpening, which I share through my JNS Knives collection.

I also regularly visit wholesalers, miners, and mines in Kyoto to learn more about natural stones—how to identify, use, and appreciate their qualities. Many blacksmiths I work with incorporate these stones into their finishing process for knives and razors, often achieving better results compared to synthetic alternatives.

Over the years, I’ve sold and tested countless natural stones, many of which you can see in my JNS SOLD Archive. 

My goal is to provide high-end Japanese knives and natural stones for knife and straight razor enthusiasts. I test all stones on premium Japanese kitchen knives, straight razors, Kamisori, and high-quality Japanese tools to ensure their quality.

All products on my website are personally selected and tested in my kitchen and workshop. I only sell items that I would use myself and keep in my collection.
