About JNS Japanese Natural Stones

I am Maksim Enevoldsen, and JNS is a one-man operation. I started sharpening and selling Japanese natural stones in 2008, and registered the company officially in 2011.

My journey into Japanese knives and stones began as a trained chef in Denmark, with education in Gastronomy. With over 10 years of experience working in various restaurants, I used a wide range of knives and sharpening stones. Over the years, I used many different Japanese knives and natural stones, and that is what led me to start JNS.

I have had the privilege of visiting and training with some of my favoured blacksmiths, including Shigefusa, Kato, and Wakui, and others. Through these experiences, I developed my own style of sharpening, which I share through my JNS Knives collection.

I also regularly visit wholesalers, miners, and mines in Kyoto to learn more about natural stones — how to identify, use, and appreciate their qualities. Many blacksmiths I work with incorporate these stones into their finishing process for knives and razors, often achieving better results compared to synthetic alternatives.

Over the years, I have sold and tested countless natural stones, many of which you can see in my JNS SOLD Archive.

My goal is to provide high-end Japanese knives and natural stones for knife and straight razor enthusiasts. I test all stones on premium Japanese kitchen knives, straight razors, Kamisori, and high-quality Japanese tools to make sure they are good.

All products on my website are personally selected and tested in my kitchen and workshop. I only sell items that I would use myself and keep in my collection.
