Kuri Kogatana is usually used as tool to cut in wood or leather. But i find this fine and very precision blades to work super nice for other tasks in the kitchen too. They are super sharp as razors.
This one is made from Sweden Steel in Sanjo by famous Iwasaki that also make best Kamisori razor in Japan , handmade and forged. Fit and finish of that blade is very good spine is rundet saya is made from ver nice Ho wood ! Very clear and haze lamination line !

New ebony handles online 🌹😍 I have bought some very very good quality of Gabon Ebony (Diospyros crassiflora) from Germany with tight grain and send it to Japan Sanjo so they could make some special Wa handles for me as it is very hard to get that kind of Ebony in Japan ‼️ Fit nice for 240mm 270mm knives but can also be cut down to smaller size to fit 180 and 210mm knives
