In "Blue Steel" that i think is best for western use as we work much more with dancer and harder wood.
Carbon steel (can rust ) "Blue steel" has a carbon content of 1 - 1.5%, chrome 0.2 - 0.5%, and 1 - 1.5% tungsten

Chisels come unsharpened !!
