Kokorozashi can be translated as: will, motivation, ambition, a sense of purpose, or personal mission With this brand i will strive to make the best i can, to make the grind the best i can and fit and finish the best as i can
That's why all will come with rounded and polished spine and choil, as flat bevel as possible — still with some convex of course And razor sharp out of the box
Blade is forged by Tanaka Yoshikazu in Sakai with his amazing White 2 steel heat-treat
Chuka Bocho (中華包丁) means Chinese kitchen knife in Japanese It is the Japanese take on the Chinese chef knife — think of it like a gyuto but in rectangle shape The tall blade makes it very easy to guide with your knuckles and scoop food off the board
It is a very versatile knife — great for slicing, chopping, mincing, crushing garlic Many people use it as their main chef knife and never need anything else
This version with White 2 is on the thinner side — it is a slicer, not a bone chopper The Kurouchi finish keeps it looking sharp even after heavy use
