Misono was established in 1935 in Seki City, Gifu Prefecture — a city with over 800 years of blade-making tradition going back to Japanese sword production. Misono is Japan's oldest Western-style knife maker and makes everything in house — forging, grinding and sharpening, by hand, with around 50 workers.
The Sweden series uses pure high carbon steel from Sweden. This is not stainless — these knives can rust and need basic care after use. What you get in return is a blade that sharpens easily, holds a fine edge and responds well on a whetstone. HRC 60, 70/30 double-bevel edge.
The construction is hand-forged and hand-finished one by one. Full-tang black Pakkawood handle with brass rivets and stainless bolster. Western profile — familiar shape for chefs coming from European knives — but built and finished the Japanese way.
This is a professional kitchen knife used by working chefs. Reliable, sharp, well-made and easy to maintain. Some models in the Sweden series come with a hand-engraved dragon on the blade.
