Munetoshi Sanjo

Munetoshi is made by Kouichi Tsurumaki — a third generation blacksmith from Sanjo, Niigata. He learned everything from his father, starting blacksmithing in his mid-teens, and has been at it for over 50 years.

His background is in heavy work — axes, nata and heavy duty blades. That is exactly why I approached him. I wanted a blacksmith who understood toughness and strength, not just kitchen knife production. The result was some of the most robust knives I have ever handled.

Fit and finish is not his priority and you should not expect it. These are rough, rustic knives — water quenched, hand-laminated, made for abuse. Fully handmade at every stage — hand-laminated blades at this price point are extremely rare.

What you do get is cutting performance. In my opinion on the same level as Shigefusa and Kato. White steel takes an incredible edge, easy to sharpen, and Munetoshi runs his blades tougher than most white steel knives I have tried. They hold up.

At this price they are very hard to beat.

All Munetoshi knives made for JNS come with a Ho wood handle and buffalo horn collar, made in Sanjo to our specifications, with hand chiseled Kanji on the blade.
