This is the knife Tadafusa is known for. It is not a saw. Small shallow teeth on a thin 1,6mm blade, so it cuts through a hard sourdough crust without crushing the crumb underneath, and it still handles a tomato or a soft cake. 240mm, 123 grams.
Most bread knives are throw-away, because you cannot sharpen them. This one you can.
Kobo is Tadafusa's own workshop line from Sanjo in Niigata. The steel is laminated SLD, semi-stainless, with a handle in thermally treated chestnut that needs no oiling. It comes in a nice cardboard box, so it also works well as a gift.
All knives JNS carry are handmade, one by one. Size and thickness can vary a little, and small marks in the finish can happen. This is normal for a handmade knife.
