210mm gyuto, 168 grams. Thick 4,9mm spine at the handle, going down to 0,9mm one centimetre from the tip. So it has weight behind it where you hold it, and is thin where it actually cuts. This is the everyday knife for most kitchens.
Ookami is Tadafusa's hammered line. The tsuchime (hammered) face helps food fall off the blade instead of sticking, and the spine is left thick at the handle: real Sanjo workhorse geometry, a knife built to be used hard every day, not babied.
The core is laminated SLD, semi-stainless: long edge life and easy to live with, no worry about rust. D-shape ho wood handle.
All knives JNS carry are handmade, one by one. Size and thickness can vary a little, and small marks in the finish can happen. This is normal for a handmade knife.
