A real bread knife, not a saw. Small shallow teeth on a thin blade, so it goes through a hard sourdough crust without crushing the crumb underneath. It also handles a tomato, a soft cake, a brioche: all the things a coarse serrated knife destroys. 240mm.
Most bread knives are throw-away, because nobody can sharpen them. This one you can sharpen, and it will outlive every bread knife you have owned.
This is the Ookami version of the bread knife Tadafusa is known for. Hammered (tsuchime) finish, a D-shape ho wood handle, and a laminated SLD semi-stainless core, it holds its edge a long time and you never have to worry about rust, even if you leave it in a wet kitchen for a while.
If you already bake, you know that the wrong knife ruins a good loaf. This is the fix.
All knives JNS carry are handmade, one by one. Size and thickness can vary a little, and small marks in the finish can happen. This is normal for a handmade knife.
