Santoku and bunka are the Japanese home knives. They are shorter than a gyuto, around 165-190mm, with a tall blade and a flatter edge that is very good for push cutting vegetables.
The bunka has a pointed tip, the santoku a rounded one. If you have a small kitchen or like a compact knife, start here.
